Here is the problem

Date: 7/10/40
KM Grid: AM 53
Time 8:00 a.m.
Weather: clear

Been working AM 53 and AM 52, I have 5 eels loaded and two topside that I can't access cause of the sea state.
Radio report earlier has a large convoy coming SE towards me.
I am in front at periscope depth, let the first flower class pass to port.
What before my wondering eye should appear, but two Granvilles and a hugh tanker almost dead ahead at 2500m.
Scaning quickly two rows over is a Nelson class BB.
I choose the two granvilles and the tanker for my four bow tubes. Sank one granville and the tanker. Missed the other and missed with a rushed stern shot at a small merchant.

Would you have gone for the Nelson?

For me, it would depen on how easy a shot would it be to hit the nelson with three torps.

Yes, I should have taken the Nelson first and then the merchants

I would have sunk the Nelson then concentrated on the merchants.

To get the Nelson would mean perhaps two more peeks in the scope and letting the tanker go past.
Then maybe a clear shot.
My major worry was crossing the columns and not getting rammed by some stupid merchant.
I went for the "bird in hand" attack.

Then it was the right thing to do. Better a merchant than nothing at all.

It's a rather difficult question for me to answer. What it boils down to (for any ship) is a bunch of factors. What side am I on, at what angle? How far apart are the ships spaced? Where is the ship in relation to other potential targets, especially the escorts? Is the weather bad enough so that steamers can be used?

In ideal conditions, these are my targets in order of priority.

1 - Carriers (fleet and escort - each deck gone means less planes in the air to threaten my allies)
2 - Battleships, Battlecruisers
3 - Cruisers
4 - Troopships, Tankers
5 - Cargo ships
6 - Escorts

Historically speaking you did exactly what you were supposed to do: Merchants , especially tankers were the first to be attacked.

But , Sh3 is a game so I don't know what my decision would be.
Most probably, I would have gone for the HMS Nelson.

Don't do it! I just had exactly the same opportunity as you. 1st patrol of a new career, it's sept '39 and I'm around BF16 shadowing a large convoy. I've been with it long enough to feel confident that there is only 1 ASW patroling the area in front of the convoy and no other escorts.
I get in a little closer to eyeball it at dusk and spot the Nelson sitting in the middle of the convoy. The sea is a little choppy - I decide to go for it.
My 1st attack is from the rear of the convoy, about 4k from the Nelson - all 4 foward tubes are set to magnetic triggers and my attack is slightly off centre to ensure none of the other ships in the column detonate my eels.
All 4 tubes fire - 2 detonations about 300 metres in front of me, no damage. 1 sinks before reaching the convoy and the other detonates about 1k away from the target.

I'm not happy.

Luckly noone has notices the explosions, so I decide to set up for another attack with my 3 remaining foward eels. This time from the side and closer.

My approach is good and I'm sitting just inside the 1st column, about 1.5k from the Nelson.

All 3 forward tubes fire - 2 detonations near the 2nd column and 1 miss.

Those guns on her are really impressive to watch when they're pointed right at you and firing...

Thankfully she didn't give chase and I was long gone when the ASW arrived at the scene. Minor hul damage from the light guns and I'm out of foward eels without making a single hit on the convoy.

I'm going home!

I go for the bb very time. Especially if there's only 1 or 2 escorts early war, I'll take them out first, then the bb, sthen I can ravage the convoy with my deck gun.

That's what I was thinking!
Its that little bit of mental "realism" I have to play with.
I love the "winged horse" on the stack of the tanker.
