Think of it as a fan (actually that's what it's called, a fan shot) the torpedoes selected bill fire as a salvo, one after another. The greater the spred, the wider will the fan at the end of it's run. Like Rykaird says, when you select a fan shot, the spread will appear on the plotting sheet of the TDC screen.

As a rule of thumb when the target is close you can opt for a large angle (3-5deg) to ensure that all of the torpedoes will hit. When the target is far away things are more difficult, but to ensure hits try to set up for a small angle spread (1-2deg).
