i can guess the range from the hydrophone sound reasonably accurately even with map contacts off. I plot my best guess, then simply surface and run quickly down the bearing, submerging and taking hydrophone readings when I have covered about half the distance. You rapidly get a reasonable estimate of the target course and speed. Rinse and repeat until you see the target.
I used to cheat by spamming the L key whilst tracking across the target. The lock works on anything that has spawned into the game world, out to about 40km, even if you cannot see it. You can then examine the target in the external view, see it's class on the notepad and if surfaced you can ask the crew for the range. This is naughty, but in real life in clear weather you could see the tips of masts and funnel smoke at far greater distances than the game allows.
If you look up "four bearing method" you will find a way of plotting a target course, position and speed using just the hydrophone. This is not something actually used in WW2, but it works in game.
