One advantage of a faster torpedo is to take out convoy Escorts. When they find you and come after you, once they're within 600 to 500 meters, you're "fast" speed torpedo set on magnetic and depth just below the Escort's keel will sink them 90% of the time.
Once you clear off the closest Escorts the convoy is easier to fire on. I usually load all the Steam torpedoes I can and only carry a couple of electric torpedoes in reserve. As for Duds, I'd say part of that depends on your Game Options, and/or torpedo mods if you use any. Steam torpedoes set to their lowest speed will give you the longest travel distance. Magnetic and Impact are, in my thoughts, a crap shoot. I've found that either has the same chance to be a dud. Especially in the early war years.

I haven't had any luck on fast. I found out that it generally, would shoot in front of my targets. Medium speed for me.
I try to move in close, and I mean close. I dive to avoid the escorts in front, then if not detected, run up to 14 meters, pop up my scope and when targets are between 1000-800 meters, open fire. Generally two per ship does it, occasionally one will. If it don't, I left the wounded duck pass me by and open up with aft tubes.

Well, since I am using the manual torpedo-aiming I need to change the speed of them accordingly to get those dots on line. I just don´t trust all those techs. Yes, probably I´m a noob.

You have to remember that changing the speed also affects the range. Whenever I do a port attack and use slow speed because it has the greatest range. You can also change up the speed to try and make torps hit targets at different ranges at/around the same time.
