Anatomy of the Ship: The Type Vii U-Boat by David Westwood has some very clear drawings that can be used to determine scale

The U-Boat: The Evolution and technical histyory of German Submarines by Eberhard Rossler also has some very detailed drawings and technical information.

I was able to pick up s new copy cheap! It's an excellent book, well worth the money. If you can't buy a copy, at least check it out (no pun intended) through your library.

Check this image, download it to your computer, if you zoom in you will see the numbers indicating each compartments length

This is the Original U-boat maints mech and operation manul for the type 7.

It has a compleate diagram, and operation lables from flooding the tanks to the holding compartments, maybe more than what you wanted. By the time you look over this, maybe you will know the basics of running the real U-boat...
