You should try using the english system. It really isn't any harder.

Most determine speed by plotting the target's position 2 or more times over a period of time. So if you are tracking a target, plot it's position now, then 3 minutes later plot the position again. Take the distance it has moved (in yards) and devide by 100. This will give you the speed in knots. We call this the 3 minute rule. For example, a ships that moves 1100 yds. in 3 minutes is going 11 kts. Of course you don't have to use 3 min intervals, but it is more convienent to do this way.

One can also use the automatic timer button in the game (in other words the crew does it for you), but I would advise using the above method because the in-game button is known to be of questionable accuracy.

I'm just learning some of these techniques myself. It sure changes the game when you can track and plot course and speed using the map tools and the echo ranging. until recently I hadn't realized I could sink merchants without even coming to periscope depth.

It's something to shoot and have only the chronometer indicate when the hits should come, then if they do getting to drift up to periscope depth in time to see the bow slip under the waves.

Also there are some good clips on you tube that illustrate these methods.
they helped me out a-lot.

Yes, many different techniques are used. Manual targeting is, IMO, what makes SH 4 more than just another computer game.
