I'd delete the SH5 folder located in Documents and let it load a new one on game start. Uninstalling the game doesn't remove this folder and my guess is that the leftover data in that folder is now conflicting with the 1.2 patch.

You'll just have to go back and set your options (sound, video) again in the game.
