There was one encounter of sub vs sub, it was in 1945, off Sweden. I can not remember the names of boats but a U-Boat was sunk by a submarine. If anyone has more knoledge on that, please elaborate!

Check Razark's post above. It was the U-864 and was sunk by a British sub.

There have been some documentaries on it because it is the only time it ever happened and it was carrying mercury to Japan and the mercury is leaking into the North Sea.

There were dozens of those, but as previously said there is only one known case where both participants were submerged and which ended in a sinking. Anyway the only u-boat lost anywhere near Sweden in 1945 was U-745, location unknown, and the most likely cause of its sinking is thought to be German mines.
