Probably the most important quality is patience. First try to establish the targets course, then speed. You might need several readings to get it correct. Then try to get in front of the target at between 500 and 1500 meters, perpendicular to the target's course.
If you do this, you have a good shot.
Convoys are basically the same, except you have to do this while you are evading the escorts.
This is not easy, and after May, 1943 almost impossible. Which is why the BDU called off the Atlantic submarine campaign at that time.
U-boat losses late in the war were almost 100%.
Many of the super-mods play this way. Not so, the vanilla game. To learn the game, it is best to start with SHIII, in 1939 and become proficient at attacking. Then the SH4 U-boat addon. The American fleet boats are a bit different, but with the above experience they are easy to learn, and a bit easier (to play) as the Empire of Japan had poor radar, and the ASW air coverage was poor.
Tracking and targeting are basic trigonometry, and/or basic vector physics.

What are the best boats to use in the start id immagine the S class only having 4 tubes being utterly obsolete yet the gar class are modern with loads of tubes.

The big diffrence i have is that i am used to commanding 18,000 tonnes of delta IV's we never surface always aim to run away and hide and when we need to come out and fight everything is there for us to use the information is updated there and then targets are located 30 to 50 miles away and shot at from distance as you can appreciate the modern marvels of tech help you do this.

Its more i now have to regress and work backwards i now cant fire a shot at a ship behind me with the forward tubes at 15 miles away and guide it to the contact.

in our systems we can pick up locate track and enguage in 10 minuets so its going to take an hour maybe here the diffrences are very apparent.

I like the system it will teach myself how to go back to the drawing board with tactics for the nuclear submarines i now need to work out how to engauge the best angles in which to engauge how to work all the rest of it out and what boat i should use as a first timer and where from so help advice much needed much appreciated too.
