Although you're right about the fact we haven't played it, truth is,
there are enough screen shots available (from preview versions) to form an opinion about the looks.

I hate the periscope interface of SH5. But external detail is jaw dropping and crew management is an improvement and how we can walk throughout the boat is a major plus for me - but then again SH3 with one mod we can move through the crew quarters and soon we will be able to do the same with the diesel room mod.
