Move crew to rest ? etc

If you click on a manned compartment, you are asked if you want to "Move crew to rest ?", likewise, if you click on an empty compartment then you can populate it with crew.

Now my question is this: Is it possible to adjust/change/experiment with the crew members who auto populate the compartment ? Can anyone give me any pointers such that I can investigate this area myself ?
