I often have radio message that tell me that there is convoy in certain zones. I even see them on the map but very far away. The problem is that i get they speed, coordinates but not the direction. How can they spot the convoy, note their speed, coord, but not the way their going ???

Find the convoy icon on the navigation map and click on it.It will show you the direction.

not that they don't change directions.....if you're playing stock, they could despawn in the middle of the ocean...but try to figure what port they may be heading towards, try to find a bottleneck....

You also have to remember that if the course says NE that you are talking about an arc the could be 20-40 degrees in size from that point so you could sail there and still be hundreds of miles away.
I never chase those convoys. It is much easier to find the one along traffic routes. Especially if your using RSRD.
