All depending the situation and how far escorts are
If using IRAI, and if you are already detected, then it's too late
Dive the deepest you can, and run on silent running giving them your sub smallest dtection area (bow/stern).
If they are 1 or 2, you can shortly accelerate when they are right upon you or when they pass you. Never accelerate when they are facing you, otherwise they'll easily know where you are going!
If they are more than 2, your chances are very low to escape, as there will be always 1 to hear what you will try to do...
You can change your running depth after each time they ping you too.
Your best chance is always the depth. Not the speed.
Rotative hydro is a good card for you too, as you'll be able to know their exact position any time on stern/bow...stock GHG can't do that! (assuming you're not cheating with external view, aren't you )
But remember even the lowest speed on and silent running, they can still hear you!

Only 3 rules for me VS escort (playing DID):
- Never engage them if not at least 100m depth below.
- If more than 2 destroyers close by, all stop and wait for other target...
- If good meteo and calm sea, go hunting merchants!
