need someone to refresh me

hi all,
aint played the SH series for ages, they have just been sat there gathering dust. however i got the urge to play SH5 again after playing it the first time for a couple of hours when it first came out and then never touched it since.

i played SH3 extensively but thats going back a few years now.
my problem is this, i know how to intercept ships/convoys in SH3 but now cant remember how to do it.....so i aint got a chance in hell of working it out in SH5, so can anyone post me a baby steps guide on how to do it. cant seem to find much on the search option but i may be blind

or even point me in the right direction.
