Addin' single mission question ...

can you add in single player missions durin' a patrol without tippin' the apple cart

You can't add them to a career but can play them as a separate entity.

Thats what I meant ...

So I can add'm in without fear of a CTD due to runnin' a career and still at sea

I'm not sure what you mean now.

If in game during a career, save the game and return to desktop.

Now reboot the game but select the single missions option and you should be good to go.
