In my set-up every time I place the cross hairs on the target it is immediantly identified as to what class ship it is
How can I make it so that this doesn't happen ?

Select 'Manual Targetting'. If you can't, as I can't, actually do manual targetting, turn on 'Weapons Officer Assistance'. Then you can get all the info updated by asking him, and it's not there except when you do ask. It's not as realistic as full manual targetting, but it feels real, and to me that's what counts.
If you're in the middle of a career you can change it by setting up a single mission. You can change gameplay options from there, and they will be changed for the whole game, including your current career.
