Lost among the GUIs

Ok, I'm at a complete loss with all those GUI Modes ( I'm probably not the only one though ), on top of it, I haven't visited the forum for a while.

Could Somebody clarify what are the differences ? ( the main GUIs and the variants )
Are some obsolete ? What are the most up to date ?
