How to change sub name

I forget how to go in and manually change your sub name and #, ie.

Just got a new boat, (Gato SS212) and I want to change it to the Harder SS257.

never mind, I got ta tinkering with files and got 'er done, knew how at one time just had to come back

If anyone would like to know I'll tell, if not this can just be deleted.
