CAOD Help

Hello all, I have recently started a new campaign in COAD and I am trying to do a run through with the limited visibility realism value checked. Well i am having some difficulty and would greatly appreciate any tips. Whenever my watch officer reports an escort sighted I always try to inch up so that I can at least see the convoy and plot a probable course to try to intercept but the escorts always intercept me before I even have eyes on the convoy do you guys have any tips on intercepting convoys? Also when an escort is spotted and you know a convoy is near when is the proper time to submerge? I always like to get as close as possible but that hasn't been working, but I intercepted a convoy a few days ago and on my nav chart it showed the convoy and a projected course, how do I make it so that this happens every time so that I may intercept?
