is there any way to install just the planes and ships without installing the entire mod? if not, is there any way to disable the realism-niss of it (for lack of better words)

Welcome to SUBSIM! That would mean major mod surgery. Basically you would have to eliminate everything from the mod files but those introducing the planes and ships you are interested in.

It wouldn't be easy, it wouldn't be quick. It would require you to be a very experienced modder, much better than I am. You might be further ahead to ask the Fall of the Rising Sun people to do it for you. They may say "no."
