Is there a way to select your sub?

Is there a way to select your sub before you are shipped out? I would really like to command the Cobia since I have been on it in RL. I know it means nothing gamewise but I thought it would be cool.

You can start out a new career, save the game before you leave port, and then RENAME your sub. Check this out on how to do it:
