what does it mean GENERIC destroyer or GENERIC cargo in the mission editor ?

Generic means the game will decide what ship to load from any that fit the criteria in the countries roster you choose

Well if you choose a generic cargo it will pick any type=102 from that countries roster
Date will play a factor
Tis the best way of getting a random spread of shipping in a convoy
