Changing crew names is possible at least. However I think you would have to edit one of the save files to do it.

The file to edit is in your documents/sh4/data/cfg/savegames/xxxxxxx/ActiveUserPlayerUnits.upc file
The xxxxxxx is the savegame "number" your editing, like 00000001 for example. In that file (edit with notepad) you will find the names of every crewmember based on where they are.

Just edit, save and load the savegame. As for the graphics side - I have no clue other than I would think the logo at least would be possible given that other things can be put on the CT.
