They replied alot, so here is the highlights:

As far as I know there are three baseball games out there right now:

MLB 2k7 - Arcadey (can be Sim-like with the correct sliders)
The Bigs - MLB Street
MLB 2007: The Show - Very sim-like

Out of the three, I'd say "The Show" is the most realistically playing baseball game. Not perfect, but I've heard stories of people with their entire team having 15 home-runs each after a couple weeks in the season. Now that's a little off.

I have "The Show", I feel its fairly realistic. Like most games that allow player creation, the realism has to be in the mindset of the player. When creating a player, the individual has to keep "realism" in mind. Playing with the skill set to Rookie, My player's attributes are realisitc. My first minor league contract I finished with a BA in the low 300's but only like 8 HRs. I was mostly a contact hitter.

In my second year, playing for the Mets AAA team, I will work on my power and stamina. Last your spent 60 days on the DL for a bum knee

As far as realism being in the mindset of the player, well not necessarily. There's no way you can create your player and be an all star right from the get go. They make you grind it out in AA/AAA for a while until you get hot, or an injury on the major league team grants you playing time. You build your stats and can basically become a great all around player over the course of your career, but I wouldn't say the stats ever feel bloated.

The lower difficulty settings help you out a lot. You can guess pitches when batting (fast ball, slider, etc) and it will let you know by blinking red whether you got it right or not, but on ROOKIE it will actually show you the exact location of the ball if you guess it right. On veteran guess pitch only yields a red flash, but you can now guess a portion of the strike zone (high, low-away, low, inside, outside, etc) and it will show you exactly where in that zone the ball will be. I'm assuming higher difficulties will NOT show you exactly where the ball goes and just flash red.

It can get easy, but that's why there are more difficulty levels.
So basically it is what they recommend as the most realistic.
