In your first picture above, I think it really is off. The gyro angle is reading -2.6 degrees. Its close but not dead on to the 3 degrees indicated on the map area.

Really though if it is intermittant then it isn't much of an issue right? I mean this isn't NASA here, its the Kriegsmarine. TDCs are physical caluclators so you could just say that it glitched or something. Put it in the same category as dud torpedoes or early detonations. Its all in the role play right?
