At Uboat.net in the Conning Tower, there are the day by day locations of a number of uboats on a number of patrols.
But you have to be a member to access info. Also, in the back of the Uboat Commanders Handbook, is a section that describes how boats were positioned. When operating in Wolfpacks, it does seem that a uboat was given about a gridsquare to be responsible for.
