Nope, he's using auto targeting...
But manual isn't that difficult: Just place the crosshair over the first mast for example and the torpedo should hit at this spot.

So I should only go for the Pyros?

What about after the attack and I have escaped? Should I follow the convoy to strike at it again or is that too dangerous?

Well it depends...what is the escort makeup of this convoy? If there's only one or two escorts and they don't have a clue where you are, you can reload and attack again, you can try to sink the escorts if you want, or you can bugger off and take what you have. Me personally...I'd blast them all, escorts included.

If you're on the outside of the convoy box then I'd first send two fish into the large merchant. Next, aim for the more distant of the pyros and send one towards her. Last torp goes into the closest pyro. Set your fish for the pyros to impact trigger running at about 4m. I've yet to see this not destroy a pyro with one torp so far.

After this have a quick look behind you and if you have a reasonable angle to one of the side escorts let her have your stern tube.

Turn the same direction as the convoy (try to get under them) and dive as deep as you can (200m or so). I used to crash dive to get down quick but now I do this silently and it seems to make it much harder for the escorts to ever get a location on me. Re-adjust your course as needed so that you slink away. That is, of course, if I'm not under immediate threat. If the escorts are bearing down then dive as deep AS FAST as you possibly can then jink and move and basically do whatever you need to do to escape.

Once you've escaped, follow the convoy at a safe (i.e. undetectable) range, reload etc. then race ahead and get yourself into position to do it all again the next night!
