I will be happy as a pigboat in muddy waters just sailing a very highly detailed Gato and Balao. Really, I don't need any other boats.
I agree though, that modelling a few extra boats and using common interfaces should be achievable without any need for compromise on detail. Still, my vote is for quality over quantity. Give us a game engine built from the keel up with quality and detail in mind, and the modders can add quantity to this great game later.
