Look at the ship and use the view of "ships under angle" in your ship ID book. Especially the bridge of a ship can be used to look at and estimate the angle the ship is viewed at.

Then just use the handy notepad tool and drag the viewing angle to the right setting.

Many people prefer the "lets plot everything like we are in a modern submarine" method to establish the various angles. But I personally find that a very unrealistic method.
