Also, I wonder what the differences with the difficulty setting. I am on Realistic. Maybe if I stepped up to Hard, I would see them dance.

Well i just started another campaign and had a juliet launch on me from around 500 feet I launched on him (mk37) from 100 feet and could not get the torpedo to go down I moved my sub down to 400 feet and lost the wire.
So how deep can you launch a torpedo? |

I don't think there's a depth limit for Mk 37 launch, only the Mk 16 since it's for attacking surface ships.
Regarding the AI behavior, it's possible they no longer dive to evade to fix them nose diving into the sea floor or inadvertently surfacing. |

The torp LAUNCHES at the current depth. Changing the sub depth does not change the torp depth. Wired torps have steering controls in the weapons tab. You should be using those after the activation to get the depth you want.
