The difference is due to the difference in computing the fire control solution. The US TDC was more advanced than the German counterpart in that it could actively track a contact based on the information you input into the TDC. Input range, bearing, AoB, and speed and start what was called the Position Keeper. It would then keep the solution updated based off of the information you input and be feeding that information to the torpedo gyro.
If you have the U-Boat Addon as well you'll see the German side still has things the way they did in SH3, and what you are looking for. But only for the Germans.
