Just installed SH 3 with LSH. Now what?

I too recently downloaded LSH3. I am an avid NYGM user. I started LSH3 to play for fun in between patrols in NYGM.

I highly recommend you try other mods. I love NYGM because while it is not pretty in terms of graphics, ports, and ship details, it tweaks the ship AI into a real hunting experience.

Attacking a convoy in NYGM is a serious endeavor. the escorts are merciless, and get worse as the war ages.

I also noticed from GWX that I was able to get high tonnage scores. As high as 115,000 tons in one patrol!

You will not get that in NYGM because the AI fights back hard.
