can it be that the feature of this mode is to not let me choose the ship anymore ?

Yes, it makes it too easy.
TWOS is based on your career realism > realistic 100%.
You can make it easier by not using Real Navigation but adding the Wind And Smoke mod.
This still leaves higher difficulties levels than you would normally find embedded in the game.
Modders prerogative.
