Default Turn ratio

I've searched for, but can't find, the turn ratios for ships. I can be within 2500m of a ship, have my torpedo speed set to fast and upon seeing the bubbles, the ship turns hard to port or starboard and the torpedo misses. My question is; did ships, even the larger cargo and merchants, in real life turn that tight and that fast?

Merchants not so much. A ship has a different set of problems than a car or a plane, and ships turn tighter the faster they go. At 30 knots an Iowa class battleship could actually out-turn a Fletcher class destroyer.

At the kind of speed a convoy is moving the ships should barely be able to turn at all.

Or less lifting periscope also help... Usually when spoted me before I sunk

Either way, they turn too fast. Are there any files that can be adjusted so ships have the correct turn ratio?

Pretty much any ship ever made can turn quick enough to get out of the way of a steam powered torpedo fired from nearly a mile and a half away (2500m = 1.42 miles )

The hard part about turning away from a torpedo a mile and a half out is seeing it in the first place, bubbles be damned!
