X:\Steam\SteamApps\common\Silent Hunter 5\data level

Thanks again. Even seeing that it is possible is a help.
the only thing that makes sobers list incompatible with steam are the hydrophone mods and fixes, and TDW's .EXE patcher, ignore those and your golden. I use JGSME, when you install it, it will automatically create a MODS folder for you in your game directory *you specify the directory during installation* like so: C:\Program Files(x86)\Steam\SteamApps\common\Silent Hunter 5\MODS

^^thats copied and pasted from my c drive, yours may be slightly different based on what drive you have it on ect.

What exactly do you mean by roll back to? Are you trying to clear your game directory from old mods in order to go back to a clean slate?

Also, judging by your other posts on this forum, you may be intreauged by my system specs, Windows 7 64 bit, intel i5 of some sort, 4GB ram, Nvidia gt525M. Playing on my laptop, maxed settings and about 30-40 fps.
