I'm not sure but I think the game has a place in the Steam folder too. That is true for my copy of Skyrim. It actually runs from there.
If the steam game saves are in My Documents\SH5 you want to save them elsewhere for copy back after installing the DVD version. If the saves are in the steam folder...try the same thing. I don't know if they are the same file types. After install, you can copy the saves back to My Documents\SH5 and hope for the best.
