Depends on what you're looking for. If you want the full experience, September 1939 is the only way to go. You start with older boats and get to see the technology progress. You start when the Brits haven't yet figured out how to fight you properly, so you can sink ships and cruise around pretty much at your leisure without being in too much danger. You can see the war evolve to where the tables are turned against you. If you have SHIII Commander installed you get to read all the monthly news reports at a time when Germany was doing well. Lots of good reasons to start early. I think the only reason to start later is if you have already experienced the early days and don't want to redo them for some reason or another. That's my recommendation, and I imagine most here would agree.
