Depends on the game, I'd say.

For example, I can run EQ2, X3:R, X3:TC, LOTRO, DDO, WOW and a number of other games on 3840x1024 (Matrox TripleHead2Go Analog, 3x 17inch LCDs) with a pair of old GeForce 8500GT in SLI mode and still get decent quality and fps.

It gets choppy on newer games and may even have to turn it all the way down to 1280 x 1024 ... I need to update the whole system, though.
