I actually don't know what could cause such oscillations other than inexperienced flight students (pilot induced oscillation...not that that has ever happened to me when I was new to glider flying

If I were him I'd have pulled the landing gear up, popped slight spoiler, and attempted a flat spin recovery - even tho there was no total spin - had he lost his airspeed, thats what would have happened. Opposite rudder and aileron.
And if that didn't work - center the controls.
