You can order the rudder to be turn hard to port or starboard by using Shift-Left Arrow or Shift-Right Arrow. To return the rudder amidships, you need to click 0 (zero) on the number pad of your keyboard. I'm not sure if this is true with all set-ups, but I need to have NumLock on for the number pad to work.
