which mods are for the sim nuts, like RUB mod, any others?

SH3Cmdr = Silent Hunter 3 Commander. This mod works hand in glove with RUB. How it tweaks the game and the improvements it makes are too numerous for the likes of me to explain well. Either download it and read the readme or check out other threads after locating them via the search function.
As an ardent fan of both, naturally I recommend them.

Although I do not use their system of mods, you may find wolves at war of interest. if I was not already immersed with e variety of mods that I already have I would probably give them a try.

Harbour traffic and Improved Convoys are another couple of mods that personally I like and RUB utilises aspects of both.

Finally Pascals mods, are a vast improvement on the various models of crew, bow waves, etc.
A must have in my book.

It is very much a personal thing, but I hope it helps.
