SH5 uses a cameras.GR2 not a cameras.dat
You can not change the GR2 files.

Afaik you can open the .cam file with S3D or merge it with the Cameras.GR2 file in GoblinEditor located in SilentHunter 5 directory.

This file i use for first steps:

Thanks to elanaiba for the mod and sharing the knowhow.

Now it have zoom also in next/previous unit cam and i love it.

Small problems with flickering textures, but nice screenshots of your sub.
