There are many shooting techniques in the sticky thread above "Skipper bag of tricks"

Shooting sterns is no different than shooting the bows, everything is the same, just have to track properly to bring your sterns into a shooting bearing. If I attack a convoy many times I'll shoot the bows and turn hard and shoot the sterns on the way out...

Study all the shooting tutorials, there will come a time when all of them can be used.

Stern tube shooting really helped me refine my tracking skills. It requires good course and timing to scoot across in front of a merchant. Too soon and he is too far away. Too late and you're wearing him as a new hat. It is very satisfying when I end up 600 yds away from him on a perfect 90 to his course.

Of course, I just restarted the war in an S-boat, so it doesn't matter any way.
