Mmm...I don't think you are doing anything wrong Studders. Take a look at what I went through not so long ago http://www.subsim.com/radioroom/showthread.php?t=148819 In the end my solution was the same as yours, surface/periscope depth and torpedo

FINALLY!! Ive just managed to escape them and when i was near brest another one was onto me and i managed to evade that. Think im getting the hang of it. Gonna start a new career me thinks. Startin a new game in 1942 when im such a n00b is probly a bad idea. i just liked the big sub and launch base

Going red while you're being pinged is not necessarily a bad thing. The stealth meter, as I understand it is a visual/audio measure of how likely you are to be heard/seen. If you're already under and you're being pinged, the meter may turn red but that doesn't mean you've been heard as the AI can only use one sensor at a time. I.E. they can't listen if they're pinging. Use that time to go to flank speed and get your aspect angle as small as it can be against the pinging destroyer. By the time they go back to listening and you've gone back to slow speed, you should be in good narrow shape to get away. I usually see my stealth meter turn red as I take evasive action and then go straight back to green when I go back to silent running with my butt end facing the DD.

Thats cleared my suspicions about the stealth meter. I did wonder how that worked.
