I've done it by hydrophone in low visibility.

If you use the electro boat it has the new sonar than ot's really easy to sink a ship without a periscope.

Yes... I've killed many a ship BVR and just listening.

In fact I can tell you when you sink a ship like that (if your map updates are on) it will plot a gray sunk-ship icon instead of a red one.
