Hi there! THEBERBSTER's mod list is a good place to go for some really good mods and to be honest, there is almost no bad mod at Subsim. I also recommend trying out Wolves of Steel if you got the power to run it or Sober's Mega mod if again you have enough power in your PC to run the game. If you are going for realism try the mega mods and if you just want a couple of mods try some of the graphics ones like Real Environment and Dynamic Environment. I myself prefer Dynamic Environment better because it makes the water much more blue and appeals to my eye. Real Environment makes the water much more reflective so sunlight and moonlight both reflect more on the water but hey both are better than the original! I also recommend that you try the A Fist Full of Emblems mod! That mod gives you plenty of emblems to choose from to put on your U-Boat! The stock vanilla game does have emblems but not as many so more emblems to choose from the better! If you want a good UI mod then try using TheDarkWraith's NewUI and TDC 7_4_2 or 7_5_0 test version 18 as one is a beta test version of the mod. SteelViking's Interior mod is also good for making your U-Boat look better than the stock version. Hope this helps you out fellow Sub simmer!
