Is there somewhere a mod that changes these 'Disney style' Nav Maps into something looking more realistic?
I mean, did they really have coloured maps and charts? No

Anyway I'd like to have one black/white with a tint of sepia.

Or, what available mods would you suggest to get a better one?

There's the IO Strategic map mod which tries to make it look a bit more realistic I guess. You could also try grey scaling the gradient map file maybe?

This thread has some nice map, but most are Pacific, but gives an idea of historical maps.
