There should be a guide in the naval acadamy for torpedo targeting in the game.

There is one parameter I did not find: the speed of the torpedo.
How is it possible to estimate the point of impact without knowing the exact speed of the torpedo? (Manually I mean) |

The TDC already takes this into account. It should show this in a small inset dial on the speed dial of the tdc page. If I remember correctly it is 30, 40 or 45 knots for type 1 torpedoes. 30 for electric type 2 torpedoes. But it's been a while since I played. You might want to reverse calculate from what the gyro angle, periscope bearing and Aob show you.
Be mindful though of a bug which does not update the calculation if you switch to a different tube with different torpedoes speed setting. Always check or use the same speeds.

According to the Wiki on the type G7a torpedo (type 1) it is 44 kts, rather than 45 kts. But your mods or vanilla SH3 may vary.
