I've seen this (or a very similar) device in operation twice. And it looked more or less like this:




I didn't realize the piglet can be pivoted into vertikal position. Maybe this is the modus operandi for very tall farmers, or a special cutting technique (3-60-horizontal-nutscrew?). And I've seen farmers using small skinner like hunting knifes and even kitchen knifes for the procedure (admittedly some 20 years ago). Maybe a scalpel these days is the mandated tool of the trade.
