Two sources i would recommend are a good hard look at the 1958 movie 'Run silent, Run Deep', and some decent modelling books by Squadron/Signal and Osprey.
Granted, Run Silent, Run Deep is not 100 percent accurate in its portrayals, but it comes very close, and with the theme of Clark Gable running constant drills in order that he might sink 'Bungo Pete', it shows a great many shots of the watch crew in position and would also give you a good idea of dress too, as in these respects, it is pretty accurate. There is also the scene where the cook gets left on deck when the sub dives, which would probably assist you in terms of scale and such. Squadron/signal and Osprey titles aimed at modellers are a great source of info too of course, as you probably know. There are specific titles from SS on the Gato and other US subs, and Osprey do many titles on crew dress including one on US WW2 sub crews, and like the DVD of Run Silent, Run Deep, they are well worth having on your bookshelf. I'm pretty sure Borders sells the DVD for about a tenner, and Ian Allen bookshops usually stock Osprey and Squadron/Signal titles in abundance, most of these books are a tenner too. Here are some screen captures from the aforementioned Run Silent, Run Deep. But, most of them are rather distant and none too detailed.

Thanks folks...mainly seeing the fact that like u-Boats the uniform rule was relaxed while on patrol.
